Lemon Curd Recipe

This sweet & zesty explosion is a favourite in the Roots Kitchen.

It can be used for anything - from layering a classic Victoria cake to using

it as an accompaniment with a cheese platter.

We use lemon curd as the base for one of our signature desserts:

'Oops, I dropped a lemon tart'...and we convinced the Chef

to share his recipe!


1/2 cup Fresh Lemon Juice

4 tsp  Lemon Zest

2/3 cup Sugar

8 Egg Yolks

6 tbsp  Butter

1 tsp Vanilla

3 Sprigs Lemon Thyme (optional)

combine all ingredients in a medium sized glass/aluminium bowl

on top of a small pot with simmering water.

Stir continuously until the mixture thickens & coats the back

of the spoon.

Remove the thyme sprigs (if used) & let cool.

Use as desired.
